Keep refrigerated. Wash the mango before use.
Preparation
- Wash the mango thoroughly.
- Place the mango on a chopping board with the stem end facing upward.
- Carefully cut down either side of the stone to create two mango cheeks.
- Score the flesh into cubes without cutting through the skin.
- Turn the cheek inside out and cut away the cubes.
